Birthday




Yesterday was Rasmus 29th birthday, we celebrated it with a limecake:)

Today was really beautiful and warm again, I wish the weather stays like this..

therese, sorry for the late recipe. a messy one, but here it is:
dough: 200 g digestive, 75g butter, 1 tbsp raw sugar, 1tsp cardamom

filling: 4 egg yolks, 1dl sugar, 1/2-3/4 juice from 2-3 limes, grated lime zest of 1-2 limes, 4 egg whites, 1/2dl sugar

start with the dough, oven 175°C.
crush the digestive biscuits,mix it into a bowl and mix in the cardamom, sugar, then add the melted butter and mix well. Next place the butter-crumb mixture in a flan tin and, using your hands, press it down evenly and firmly all over the base and up the sides of the tin.(24cm in dm)
pre-bake it in the oven for about 10min. let it cool.

filling: mix egg yolks and lime juice, sugar in a bowl. place the bowl over a pan with almost boiling water and whisk for about 2 minutes, or until the egg has thickened. whisk in lime zest.

then on the side, whisk eggwhites and sugar to a thick cream. Stir in the yolk-cream.

then pour the whole lot on to the baked crust and return it to the oven for about 15 minutes.
Let it cool and place in the freezer. take it out 20min before serving.
top with whipped cream and sprinkle with lime zest!
